Try ‘no regret’ cake recipe! You can enjoy it without any worries – almost no fat, no added sugar, no gluten. Full of good ingredients – whole grain oat flakes, carrots, bananas, olive oil, walnuts. And children love it!! Very quick to make as well.
Ingredients (26x16cm baking pan)
1 cup whole grain rolled oats (gluten-free)
2/3 cup corn flour (can be replaced with whole grain wheat flour if no problems with gluten)
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon vanilla powder
2 medium bananas
1 large carrot
1/4 cup water
3 tablespoons olive oil
1 tablespoon of fresh lemon juice
2 small or 1 large egg (or egg substitute)
A handful of raisins
A handful of walnuts
(For spicy version add – 1/4 teaspoon of ginger powder, a knife tip of nutmeg, ground cloves, cardamom).
Preparation
Preheat oven to 180 degrees.
Put oats flakes and walnuts in a food processor or blender to grind them till small grains. Then put them in a bowl and add baking powder, cinnamon, vanilla and spices if desired, mix.
Cut bananas and carrot in fine slices, put in a blender, add water and blend it well. After put this mixture in another bowl and add the oil, eggs, lemon juice and mix thoroughly. Pour this mixture to oat flakes and mix, add raisins, and at the end add corn flour. Sprinkle oil in baking pan and pour dough inside.
Put in the oven and bake for about 40-45 minutes. Cool it and serve! You can garnish it with pure honey, maple or agave syrup.
